Place the chicken breasts between two pieces of plastic wrap and pound them until they are an even thickness.

Step 3: Assemble the Chicken Cordon Bleu

Lay a slice of ham and Swiss cheese on each chicken breast. Roll them up and secure them with toothpicks.

Step 4: Make the Breading

In a shallow dish, whisk together the eggs and mustard. In another shallow dish, mix together the flour, panko breadcrumbs, Parmesan cheese, and a pinch of salt and pepper. Dip each chicken roll in the egg mixture and then in the breadcrumb mixture, and coat each piece evenly.

Place the chicken rolls in a greased baking dish and drizzle with the olive oil. Bake in the preheated oven for 2530 minutes or until the chicken is cooked and the cheese is melted.

Step 6: Make the Mustard Sauce

While the chicken is baking, make the mustard sauce. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.

Whisk in the chicken broth and cream and bring to a simmer. Cook for 5 minutes or until the sauce has thickened. Remove from the heat and stir in the mustard.

Step 7: Serve

  1. 5 stars
This was really good. I added dijon mustard to the sauce, as well. The recipe just reads butter, flour, broth and cream, which I found lacked flavor.
