Walking Taco Casserole Recipe With Enchilada Sauce

Equipment

  • 13x9 inch baking dish
  • Large skillet or pot

Ingredients

  • 2 Tablespoons olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 teaspoon salt
  • 1 packet of taco seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 1 ¾ cup (15 ounces) red enchilada sauce
  • 2 cups beef broth
  • 1 can (7 ounces) of mild green chiles
  • 1 cup white rice
  • ½ cup sour cream
  • 2-3 cups Fritos
  • 8 ounces Colby Jack shredded

GARNISH

  • lettuce, cilantro, tomato, sour cream, or jalapeños

Instructions

  • Preheat oven to 350°F (175°C). Grease an 8-inch baking dish and set aside.
  • Heat a large skillet over medium heat and add olive oil. Once the oil is hot, add the ground beef, diced onion, and salt. Cook until the beef is cooked through and then drain off any excess fat.
  • Add the taco seasoning, smoked paprika, and granulated garlic to the pan. Cook for an additional minute or two until everything is combined and fragrant.
  • Add the red enchilada sauce and beef broth to the pan and stir to combine. Let everything cook for a few minutes until the mixture is bubbling.
  • Add the can of mild green chiles, white rice and sour cream to the pan and mix until everything is combined. Let it simmer for about 5 minutes.
  • Transfer the mixture to the prepared baking dish and top with Fritos and shredded cheese. Bake in preheated oven for 15-20 minutes or until bubbly and golden brown.
  • Let cool slightly before serving.

Notes

-If you're not a fan of beef, feel free to substitute with ground turkey or chicken.
-For extra crunch and flavor, sprinkle some additional Fritos over the top before baking.
-Swap out the Colby jack cheese for another variety if desired.
-You can also use brown rice instead of white rice.
-If you like it spicy, add some diced jalapenos to the mixture before baking.
-For a vegetarian version, omit the beef and substitute with an additional can of green chiles or black beans.
-To make this dish gluten-free, use gluten-free Fritos and taco seasoning.
