Ingredients

  • 2 cups cream-style cottage cheese(450 g), or small curd
  • 8 oz elbow macaroni(225 g), 1 package
  • 8 oz sour cream(230 g), 1 carton
  • 1 egg, lightly beaten
  • 2 cups sharp cheddar cheese(200 g), shredded
  • 1 tablespoon coconut oil
  • paprika, to garnish
  • 1 teaspoon salt

Instructions

  • Preheat oven to 375°F (190°C). Grease an 8x8-inch baking dish with coconut oil, and set aside.
  • Bring a large pot of water to a boil and add the elbow macaroni. Cook for 7–8 minutes or until al dente. Drain, rinse well with cold water, and set aside.
  • In a medium bowl, mix together cream-style cottage cheese, sour cream, egg, and 1 cup of cheddar cheese.
  • Add the cooked macaroni to the bowl with the cheese mixture and stir until combined.
  • Pour the mac and cheese into your prepared baking dish. Sprinkle remaining cheddar cheese on top and bake for 25 minutes or until golden brown and bubbly.
  • Remove the dish from the oven and let cool for 10 minutes before serving. Sprinkle with paprika and salt, if desired.

- If the mac and cheese seem too thick, you can add a little milk to thin it out.
