- 1 onion sliced
- 8 cups of Mashed potatoes
- 2 cup grated Monterey Jack cheese
- 6 tablespoons canola oil
- 10 ounce bell peppers sliced
- 2 1/4 cup Italian dressing for peppers & onion
- 4 pounds chicken breasts each chicken breast sliced in half
Preheat the oven to 375°F. Prepare the ingredients by slicing one onion, grating two cups of Monterey Jack cheese, and cutting four pounds of chicken breasts into thin slices. Set everything aside for later use.
Heat a large skillet over medium-high heat and add three tablespoons of canola oil. Once hot, add the sliced onions and bell peppers, stirring occasionally for five minutes until they become tender. Pour 1/4 cup of Italian dressing over the vegetables and cook for five minutes more.
In a separate skillet, heat another three tablespoons of canola oil over medium-high heat. Add the chicken slices to the skillet and cook for five minutes on each side until they are fully cooked.
Spread a cup of mashed potatoes onto a large baking dish. Top the mashed potatoes with half of the cooked onions and peppers, followed by the chicken slices and remaining vegetables. Sprinkle grated Monterey Jack cheese over everything.
Place the baking dish in the preheated oven and bake for 20 minutes or until the cheese is melted and bubbly. Let it cool for a few minutes before serving.
