Ingredients

  • 2 large boneless skinless chicken breasts
  • 2 tablespoons butter melted
  • 2 teaspoons garlic powder or granulate
  • 4 ounces of cream cheese
  • 2 teaspoons onion powder
  • 2 ounces shredded parmesan cheese
  • 2 tablespoons fresh parsley
  • 2 ounces shredded parmesan cheese
  • 1 teaspoon salt
  • 1/2 lemon zested and juiced, separately
  • 1 teaspoons dried thyme

Instructions

  • Preheat oven to 375°F (190°C). Place the chicken breasts on a cutting board and use a sharp knife to make a large pocket in each breast.
  • In a small bowl, mix together the melted butter, cream cheese, garlic powder, onion powder, parmesan cheese, parsley, salt, thyme, and lemon zest until well combined.
  • Stuff the butter mixture into each chicken breast pocket. Secure with toothpicks if necessary. Place the stuffed chicken breasts in a baking dish and brush lightly with olive oil or melted butter.
  • Bake for 25-30 minutes or until the chicken is cooked through and the stuffing is golden brown. Remove from oven, let cool slightly and serve with a squeeze of fresh lemon juice over each piece.

Notes

  • Make sure to stuff the chicken breasts as full as possible so that they don’t dry out in the oven. 
  • Keep an eye on the chicken while it’s baking and cover it with foil if the top starts to get too brown. 
  • If you have a meat thermometer, use it to check the temperature of the chicken. It should reach an internal temperature of 165°F (75°C).
