Ingredients

  • 1 lb. Lean Ground Turkey
  • 1 tbsp Taco Seasoning
  • 4 cups Chopped Lettuce
  • 1 stick minced Scallion
  • ¾ cup Fresh Diced Tomatoes
  • 2 tsp Canola Oil
  • ½ cup Fresh Chopped Cilantro
  • ½ minced Jalapeno
  • ¼ cup Non-Fat Greek Yogurt
  • ½ Avocado

Instructions

  • In a large skillet, heat the canola oil over medium-high heat.
  • Add the ground turkey and taco seasoning to the skillet and cook for 8-10 minutes until it’s cooked through.
  • Assemble the taco salad by adding all of the ingredients to a large bowl. Toss everything together until combined.
  • Serve the taco salad on a bed of lettuce and top with tortilla chips, avocado, and cilantro.

• If you don’t have all the ingredients handy, you can also substitute turkey for ground beef or chicken.
• For a healthier option, you can use non-fat Greek yogurt instead of sour cream.
• To make this dish vegan, substitute the turkey with black beans and omit the cheese and Greek yogurt.
