Ingredients

  • 5 cups Frozen Riced Cauliflower
  • 1 1/2 cup Fresh Basil finely chopped
  • 3 cups Reduced-Fat Mozzarella Cheese
  • 3 large Eggs
  • 3/4 tsp Salt
  • 1 cup Cherry Tomatoes halved
  • 1/2 tsp Salt

Instructions

  • Preheat the oven to 350 degrees F. Place the frozen cauliflower in a food processor and blend until it forms small crumbles.
  • In a medium bowl, mix together the cauliflower crumbles, basil, Mozzarella Cheese, eggs, and salt.
  • Grease an 11-inch round baking dish with cooking spray. Spread the cauliflower mixture into the prepared dish and then top it off with cherry tomatoes.
  • Bake in preheated oven for 20 minutes or until golden brown. Let cool before cutting and serving.
