Ingredients

  • Grapeseed or Olive oil for frying
  • 2 large shallots diced finely
  • 2 cloves garlic chopped finely
  • 500 g mushrooms cut into cubes
  • 6 tsp olive oil
  • 6 tsp butter
  • 1 egg
  • 4 tbsp potato starch
  • 2 large potatoes grated
  • 1 small onion grated
  • Gruyère cheese as desired
  • Salt and pepper to taste
  • Salad leaves to garnish (optional)

Instructions

  • In a large frying pan, heat some oil over medium heat. Add the diced shallots and garlic and fry until lightly golden brown. Then, add in the mushrooms and season with salt and pepper to taste. Cook for 6-7 minutes or until most of the moisture has evaporated.
  • In a separate bowl, combine the fried shallots and garlic, mushrooms, olive oil, butter, egg, potato starch, grated potatoes, and onion. Season with salt and pepper to taste. Mix all of the ingredients together until evenly combined.
  • Divided the mixture into 8 equal portions and shape each portion into a patty. Place the patties on a plate lined with parchment paper. Top each patty with some grated Gruyère cheese.
  • Heat some oil in a large frying pan over medium heat. Once the oil is hot, add in the patties and fry for 3-4 minutes on each side until golden brown and crispy.
  • Serve your Koo Koo Ca Choo with a simple salad of lettuce leaves and your favorite dressing.
