Equipment

  • plate
  • Bowl
  • Whisk

Ingredients

  • 4 large eggs
  • ½ cup whole wheat flour
  • 2 medium-to-large ripe bananas
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground Ceylon cinnamon
  • 2 tablespoons for ground flaxseed
  • ¼ teaspoon of sea salt
  • 1 tablespoon finely chopped walnuts or pecans
  • Butter avocado oil, or ghee

Instructions

Step 1: Prepare Your Ingredients

  • Start by gathering all your ingredients onto the counter. Mash the ripe bananas in a bowl. I find using a fork or a potato masher works wonders. Leave no lumps!

Step 2: Mix the Wet Ingredients

  • In a separate bowl, crack the eggs and whisk them until they are well mixed. Add the mashed bananas and vanilla extract. Stir until you have a homogeneous mixture.

Step 3: Incorporate Dry Ingredients

  • In another bowl, mix together the flour, cinnamon, hemp seeds or flaxseed, and salt. This step ensures your pancakes rise properly and have that fluffy texture.

Step 4: Combine Wet and Dry Ingredients

  • Pour the wet mixture into the dry ingredients. Gently fold them together using a spatula. Try to avoid overmixing—no one likes tough pancakes! A few small lumps are perfectly fine.

Step 5: Heat the Pan

  • Grease a skillet or non-stick pan with butter or oil over medium heat. Allow it to get hot. You can test if it's ready by dropping a bit of the batter onto the surface; it should sizzle and bubble.

Step 6: Cook the Pancakes

  • Spoon about a quarter cup of batter onto the pan for each pancake. If you’re adding walnuts or chocolate chips, sprinkle them on top while the batter is still wet. Cook for about 2-3 minutes until bubbles appear on the surface. Flip and cook for another 1-2 minutes until golden brown.

Step 7: Serve Warm

  • Transfer the pancakes to a plate and keep them warm while you repeat cooking with the remaining batter. Serve with your favorite toppings like maple syrup, yogurt, or berries. Enjoy their smiles!

Notes

  • Use Overripe Bananas: The riper the bananas, the sweeter and more flavorful your pancakes will be. Look for bananas with brown spots.
  • Room Temperature Eggs: If you can, use eggs that are at room temperature. They blend more easily into the batter.
  • Don’t Overmix: Mix just until combined. Overmixing can lead to dense pancakes.
  • Keep Them Warm: If you’re making a large batch, place cooked pancakes in a preheated oven at 200°F (93°C) to keep them warm while cooking the rest.
  • Experiment with Flavors: Add extra mixing spices, like nutmeg or ginger for a unique twist.
