Ingredients

  • Eggs - 3 large
  • ½ cup Oil
  • ¾ cup Sugar
  • 1 tsp Vanilla Essence
  • ½ cup Yogurt or Sour Cream
  • 1 ¼ cup All Purpose Flour
  • ¼ tsp Salt
  • 1 tsp Baking Powder
  • ¼ tsp Baking Soda
  • 1 cup Seedless Raisins
  • 6 tsp Rum

Instructions

  • Preheat the oven to 350°F. Grease and flour the cake pan.
  • Beat eggs, oil, sugar, and vanilla until light & creamy. Add yogurt or sour cream.
  • Sift together flour, salt, baking powder, and soda then add to egg mixture stirring until combined.
  • Fold in raisins and rum. Pour into the pan and bake for 30-35 minutes.
  • Let cool for 10 mins then turn out onto a wire rack to cool completely. Dust with confectioner's sugar & serve.
