Ingredients

  • 1 red onion diced
  • 1/2 tsp. dried oregano flakes
  • 1 tbsp cumin seeds
  • 1 lb. ground beef
  • 1 cup of tomato paste canned
  • 3.5 cups crushed tomatoes canned
  • 1/2 cup of chopped green chiles canned
  • 4 cloves garlic minced
  • 2 cups of black beans canned
  • 1/2 packet chili seasoning mix

Instructions

  • In a big pot, put some oil and heat it on medium-high. Put in the chopped onion and cook for 5 minutes, stirring sometimes.
  • Put the ground beef into the pot and use a spoon or spatula to break it into smaller pieces. Cook it until the beef turns brown and there's no pink color left, which takes around 8 to 10 minutes. Remember to keep breaking the beef apart while it cooks.
  • Mix in the tomato paste, crushed tomatoes, and green chiles. Then, add the cumin seeds, oregano flakes, garlic powder, and chili seasoning mix. Stir everything together well. Let it come to a boil, then lower the heat and let it simmer for 15 minutes.
  • Add in the black beans and cook for another 10 minutes, or until everything is heated through.
  • Serve hot with your favorite toppings like shredded cheese, diced onions, sour cream, and cilantro.

Notes

  • Make sure to break up the ground beef as it cooks so that you don’t end up with large chunks in your chili.
  • You can also add bell peppers, corn, and other vegetables to this dish to make it even more nutritious.
  • If you don't want a spicy chili, you can cut back on the number of green chiles or use milder varieties.
  • Feel free to adjust the seasoning mix according to your taste. Add more cumin for a smokier flavor, or oregano for an earthy taste.
  • To make this even healthier, you can use lean ground turkey instead of beef.
  • For extra creaminess and flavor, top the chili with a dollop of plain Greek yogurt.
