Ingredients

  • 3 ½ cups chopped rhubarb
  • 2 cups all-purpose flour
  • 1 egg
  • ½ cup unsalted butter
  • ½ cup white sugar
  • 4 tsp unsalted butter
  • 1 tbsp vanilla sugar
  • 3 tbsp white sugar

Instructions

  • Preheat the oven to 350°F (177°C).
  • Mix rhubarb and sugar in a bowl.
  • Cream butter and sugar together in a separate bowl.
  • Add egg and mix well.
  • Combine flour, vanilla sugar, and butter mixture in one bowl.
  • Grease a 9-inch pie plate and spread the dough evenly.

Notes

  • If you find that your pie crust is too dry, try adding a bit more butter to it.
  • Place the pie plate on a baking sheet before baking, as the filling can sometimes bubble over and make a mess in your oven.
  • To prevent the edges of the crust from burning, cover them with aluminum foil or use a pie shield.
