Ingredients

  • 8 pounds shrimp
  • 2 tsp kosher salt
  • 6 stalks of minced celery
  • 2 red onion chopped
  • 4 cups mayonnaise
  • 4 tbsp white wine vinegar
  • 2 lemons cut into quarters
  • 4 tsp Dijon mustard
  • 1 tsp coarse ground black pepper
  • 4 tbsp dill

Instructions

  • Bring a large pot of salted water to a boil.
  • Cook the shrimp in the boiling water until they are pink and firm, about 3 minutes.
  • Drain the shrimp and roughly chop it into bite-sized pieces.
  • In a bowl, mix together celery, red onion, mayonnaise, white wine vinegar, lemon juice, Dijon mustard and black pepper until fully combined.
  • Add the chopped shrimp to the mixture and stir until everything is coated evenly.
  • Sprinkle in some dill and adjust seasoning according to taste.
  • Serve chilled or at room temperature with crackers, chips, or vegetables for a light lunch or snack.
