Instructions
Bring a large pot of salted water to a boil.
Cook the shrimp in the boiling water until they are pink and firm, about 3 minutes.
Drain the shrimp and roughly chop it into bite-sized pieces.
In a bowl, mix together celery, red onion, mayonnaise, white wine vinegar, lemon juice, Dijon mustard and black pepper until fully combined.
Add the chopped shrimp to the mixture and stir until everything is coated evenly.
Sprinkle in some dill and adjust seasoning according to taste.
Serve chilled or at room temperature with crackers, chips, or vegetables for a light lunch or snack.

This salad is best served chilled or at room temperature.
You can use different types of vegetables or herbs such as bell peppers or green onions to mix up the flavor of this Costco shrimp salad.
To make a lighter version, use light mayonnaise instead of regular mayonnaise.
