Ingredients

Chicken Filling

  • 1/2 cup milk
  • 4 tablespoons fresh coriander leaves chopped
  • 2 cups boiled shredded chicken
  • 1/4 teaspoon nigella seeds
  • 1/4 teaspoon carom seeds
  • 1 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 teaspoon crushed black pepper
  • 2 tablespoon 2 tablespoon butter
  • 1/2 cup ½ cup red capsicum
  • 1/2 cup ½ cup mushrooms
  • 2 small onions omelet cut
  • 1/2 cup ½ cup heavy whipping cream

Dough

  • 4 cups all-purpose flour
  • 1 tablespoon instant yeast
  • 4 tablespoon olive oil
  • 1 cup lukewarm water 110 – 115 F
  • 2 tablespoons powdered milk
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon castor sugar

Instructions

  • Start by making the chicken filling: In a small bowl, heat up the milk and add the boiled shredded chicken, coriander leaves, carom seeds, nigella seeds, salt, and crushed black pepper. Mix well and set aside to cool.
  • In a separate pan, melt butter over medium heat and add mushrooms, red capsicum, and all-purpose flour. Mix well and cook until the vegetables are cooked through.
  • Add the chicken mixture to the pan and stir everything together. Then add in the heavy whipping cream and continue stirring until everything is combined and a thick gravy has formed.
  • To make the dough: In a large mixing bowl, mix together the all-purpose flour, olive oil, yeast, powdered milk, and lukewarm water. Mix until everything is combined and a soft dough has formed.
  • Knead the dough for about 10 minutes or until it’s smooth and elastic. Then cover with a damp kitchen towel and keep aside for an hour. Preheat the oven to 350F and line two baking sheets with parchment paper.
  • Take the dough out of the bowl and roll it into a rectangle shape, about ¼ inch thick. Spread the chicken mixture evenly on top of the dough and sprinkle with omelette cut onions. Roll the dough like a swiss roll and cut it into one-inch-thick slices. Arrange them on the prepared baking sheets, leaving some space between each slice.
  • Bake for 20-25 minutes or until golden brown and crisp. Serve warm with your favorite dip or chutney.

Notes

• Make sure the dough is not too soft or else it will be difficult to roll.
• Use freshly boiled shredded chicken for the best flavor.
• If you find that your filling is too dry, add a little more cream or milk.
• Let the slices cool completely before storing them in an airtight container.
