Ingredients

  • 1 large onion
  • 2 teaspoons garlic 
  • 2 lbs. fresh tomatoes
  • 1 tablespoon black pepper
  • 2 jalapeno peppers
  • 1⁄4 cup fresh cilantro
  • 2 teaspoons salt

Instructions

  • Dice the onion and mince the garlic. Place the diced onion, minced garlic, and jalapenos in a medium saucepan over low-medium heat.
  • Cook for 3 to 5 minutes, or until lightly browned and softened, stirring occasionally. Add the tomatoes, black pepper, cilantro, and salt.
  • Increase the heat to medium-high and cook for 5 minutes, stirring occasionally, until the tomatoes are softened.
  • Reduce the heat to low and simmer for 15 minutes or until the salsa has thickened slightly. Taste and adjust seasoning if desired. Transfer to a serving bowl and serve with your favorite chips.

Notes

  • To make this salsa spicier, add one or two more jalapenos.
  • You can also add a tablespoon of lemon juice for an added zing.
  • If you like your salsa chunky, leave some of the tomatoes in larger pieces.
