- 1 1/2 pounds ground chuck
- 2 tablespoons vegetable oil plus extra for grilling
- 1 red onion peeled and cut into 1/4-inch thick rounds
- 8 thin slices pepper jack cheese
- 8 slices of thinly sliced tasso ham
- 4 hamburger buns split
- 1 tablespoon smoked paprika
- 1 teaspoon dried thyme
- 2 teaspoons kosher salt
- 2 teaspoons freshly cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 cup creamy mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon whole-grain mustard
- 1 teaspoon hot sauce or more if desired
- 5 cornichons finely diced
- 1 green onion white and light green parts, minced
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon apple cider vinegar for extra tang
- 1 tablespoon brown sugar to balance the acidity of the vinegar
- Freshly ground salt and black pepper to taste
Step 1: Prepare the Patty Mixture
In a mixing bowl, combine the ground chuck with the smoked paprika, thyme, kosher salt, pepper, garlic powder, onion powder, and cayenne pepper. Use your hands to gently mix until all ingredients are combined, but be careful not to overwork the meat. Shaping it into patties should be done with love, not brute force.

Spread a generous amount of the sauce on the bottom of each bun. Place the cheesy patty on top, then layer with tasso ham, grilled onions, and top with the other half of the bun.
