  • 1 1/2 pounds ground chuck
  • 2 tablespoons vegetable oil plus extra for grilling
  • 1 red onion peeled and cut into 1/4-inch thick rounds
  • 8 thin slices pepper jack cheese
  • 8 slices of thinly sliced tasso ham
  • 4 hamburger buns split
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup creamy mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 teaspoon hot sauce or more if desired
  • 5 cornichons finely diced
  • 1 green onion white and light green parts, minced
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon apple cider vinegar for extra tang
  • 1 tablespoon brown sugar to balance the acidity of the vinegar
  • Freshly ground salt and black pepper to taste

Instructions

  • Let’s make the magic happen. Here’s how to create your very own Louisiana Burger.

Step 1: Prepare the Patty Mixture

  • In a mixing bowl, combine the ground chuck with the smoked paprika, thyme, kosher salt, pepper, garlic powder, onion powder, and cayenne pepper. Use your hands to gently mix until all ingredients are combined, but be careful not to overwork the meat. Shaping it into patties should be done with love, not brute force.

Step 2: Form the Patties

  • Divide the meat mixture into four equal portions. Gently shape each portion into a patty about 3/4 inch thick. Create a small indentation in the center of each patty; this helps them cook evenly. Place them aside for now.

Step 3: Preheat the Grill

  • Fire up your grill and let it reach a medium-high heat. A well-heated grill is crucial for achieving a perfect sear on your burgers.

Step 4: Grill the Onions

  • While the grill heats, brush the onion slices lightly with vegetable oil. Once the grill is hot, place the onions on it. Grill them for about 5 minutes per side, or until nice and caramelized. Set them aside; they’ll add a lovely sweetness.

Step 5: Cook the Burger Patties

  • Now it’s time for the main event. Place the patties on the grill. Cook for about 4-5 minutes on each side for medium. In the last minute of cooking, lay the slices of pepper jack cheese on top of the patties. Close the grill lid to melt the cheese.

Step 6: Assembly Time

  • Once the patties are cooked and the cheese is melted, remove them from the grill. Toast the buns lightly on the grill if you like a little extra crunch.

Step 7: Prepare the Sauce

  • In a separate bowl, mix the mayonnaise, Dijon mustard, whole-grain mustard, hot sauce, cornichons, green onion, parsley, apple cider vinegar, and brown sugar. This creamy sauce adds an extra zing.

Step 8: Build Your Burger

  • Spread a generous amount of the sauce on the bottom of each bun. Place the cheesy patty on top, then layer with tasso ham, grilled onions, and top with the other half of the bun.

Notes

  • Don’t Overmix: When forming your patties, avoid overworking the meat. This keeps them tender.
  • Rest the Patties: Let them sit for a few minutes after grilling. This helps in keeping the juices intact.
  • Experiment with Cheese: If pepper jack isn’t your thing, try cheddar or gouda for different flavors.
  • Add Heat: For more spice, incorporate sliced jalapeños or a spicier hot sauce.
  • Use Fresh Herbs: Fresh parsley can be swapped for cilantro for a different taste profile.
