- 1 cup all-purpose flour
- 1 tablespoon vanilla extract
- ¾ cup butter (melted)
- 4 large eggs
- ¼ teaspoon salt
- ½ cup sugar
Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper and set aside.
In a medium bowl, combine flour, salt and sugar.
In a separate bowl, whisk together the melted butter and vanilla extract.
Add eggs to the butter mixture. Whisk until combined.
Slowly add the wet ingredients to the dry ingredients. Mix with a spatula until just combined – do not overmix!
Place the dough on a lightly floured surface. Gently knead the dough for 1-2 minutes until it forms a ball.
Divide the dough into two equal pieces. Form each piece into a log about 8 inches long and 2 inches wide. Place both logs onto the prepared baking sheet.
Bake for 25 minutes or until golden brown. Turn the oven off and let the biscotti cool in the oven for 20 minutes.
Remove from oven and let cool completely before slicing into ½ inch slices. Place the slices onto a baking sheet and bake again at 350°F (177°C) for 10-15 minutes.
Let cool completely before serving.
- For a crunchier biscotti, bake for an additional 5 minutes.
- To add some sweetness, sprinkle the biscotti with sugar before baking in Step 9.
- Feel free to add nuts or dried fruit for extra flavor and texture.
- For a softer biscotti, reduce the baking time in Step 9 by 5 minutes.
- Make sure you let the biscotti cool completely before slicing and baking for the second time. This will ensure that they hold their shape during baking.
- If you like it sweet, add more sugar or a dash of honey.
- Don’t forget to add a pinch of salt – it will help balance out the sweetness.
