Equipment

  • 1 Baking sheet
  • 1 Parchment paper
  • 1 Stand or hand mixer
  • 1 bowls

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • ¾ cup butter (melted)
  • 4 large eggs
  • ¼ teaspoon salt
  • ½ cup sugar

Instructions

  • Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, combine flour, salt and sugar.
  • In a separate bowl, whisk together the melted butter and vanilla extract.
  • Add eggs to the butter mixture. Whisk until combined.
  • Slowly add the wet ingredients to the dry ingredients. Mix with a spatula until just combined – do not overmix!
  • Place the dough on a lightly floured surface. Gently knead the dough for 1-2 minutes until it forms a ball.
  • Divide the dough into two equal pieces. Form each piece into a log about 8 inches long and 2 inches wide. Place both logs onto the prepared baking sheet.
  • Bake for 25 minutes or until golden brown. Turn the oven off and let the biscotti cool in the oven for 20 minutes.
  • Remove from oven and let cool completely before slicing into ½ inch slices. Place the slices onto a baking sheet and bake again at 350°F (177°C) for 10-15 minutes.
  • Let cool completely before serving.

Notes

  • For a crunchier biscotti, bake for an additional 5 minutes.
  • To add some sweetness, sprinkle the biscotti with sugar before baking in Step 9.
  • Feel free to add nuts or dried fruit for extra flavor and texture.
  • For a softer biscotti, reduce the baking time in Step 9 by 5 minutes.
  • Make sure you let the biscotti cool completely before slicing and baking for the second time. This will ensure that they hold their shape during baking.
  • If you like it sweet, add more sugar or a dash of honey.
  • Don’t forget to add a pinch of salt – it will help balance out the sweetness.
