Ingredients

  • 2 tablespoons of dried oregano
  • 2 cans 56 ounces each of fresh tomatoes
  • 4 cloves of garlic minced
  • 4 tablespoons of extra virgin olive oil
  • 1/2 teaspoon of freshly ground black pepper
  • 2 teaspoons of kosher salt

Instructions

  • Crush or mince the garlic cloves.
  • Open the cans of whole tomatoes and pour them into a bowl. Crush the tomatoes by hand or use a blender/food processor for a smoother consistency.
  • Heat the olive oil in a large saucepan over medium heat.
  • Add the minced garlic to the heated oil. Stir and cook until the garlic becomes fragrant, but be careful not to brown it.
  • Pour in the crushed tomatoes into the saucepan with the garlic and oil.
  • Sprinkle in the dried oregano, black pepper, and salt. Stir well to combine all the ingredients.
  • Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook uncovered, stirring occasionally, for about 30-40 minutes. This allows the flavors to meld and the sauce to thicken slightly.
  • If the sauce appears too thin, simmer for a bit longer to reduce it to the desired thickness. If it's too thick, you can add a little water to reach the consistency you prefer.
  • Taste the sauce and adjust the seasoning if needed. You can add more salt, pepper, or herbs according to your taste preferences.
  • Once the sauce reaches the desired consistency and flavor, remove it from the heat and let it cool completely. You can store it in an airtight container in the refrigerator for up to a week or freeze it for longer storage.
