Torchy's Poblano Sauce Recipe

Torchy’s Tacos is one of my favorite restaurants and I love their poblano sauce the most among all their foods. This green sauce is the perfect accompaniment to tacos, burritos, nachos, and even chips. It has a creamy texture with a slight tanginess from the lime juice and poblano pepper that makes it so delicious. Eventually, it is very easy to make at home. But the restaurant never discloses its recipe. But I can help.

Ingredients

  • 1 poblano pepper roasted, skin, seeds, and stem removed
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro
  • 1-2 garlic cloves
  • 1/2 cup full-fat sour cream
  • Salt and pepper to taste

Instructions

  • Roast the poblano pepper over a gas flame or on the grill until it is lightly charred and softened. Let cool and remove skin, stem, and seeds.
  • Place the pepper, lime juice, cilantro, garlic, sour cream, salt, and pepper in a food processor or blender. Blend until everything is well combined and creamy.
  • Taste and adjust seasonings if necessary. Serve with tacos, burritos, nachos, or as a dip for chips!

Notes

  • You can also make this recipe with jalapeno or serrano peppers for a more spicy sauce.
  • The sauce will last up to 5 days in the refrigerator when stored in an air-tight container.
  • You can also use Greek yogurt instead of sour cream.
