Ingredients

  • ¼ tsp salt

  • 1 cup cooked white rice or sushi rice, room temperature
  • For the sushi mixture:
  • ½ pound sushi-grade tuna cubed
  • 2 tablespoons reduced-sodium soy sauce
  • ½ teaspoon sesame oil
  • 1 teaspoon fresh minced ginger
  • ½ pound sushi-grade salmon cubed
  • 1 tablespoon rice vinegar
  • 1 teaspoon Furikake seasoning
  • 2 teaspoons salmon roe caviar
  • 1 large avocado halved, pitted and mashed
  • 2 tablespoons green onions sliced
  • ½ English cucumber diced

Instructions

  • Spritz both sides of a mini waffle maker with cooking spray. Heat it up, ready for the rice waffle creation.
  • Stir mirin and salt into the cooked white rice. Blend in unseasoned rice vinegar, ensuring the rice absorbs the delightful flavors.
  • Gently press about ½ cup of the flavored rice into the waffle maker. Spread it evenly to reach the edges.
  • Close the lid and cook for 5-6 minutes until the rice waffle achieves a crispy, golden-brown edge.
  • Carefully lift the rice waffle and let it cool on a plate. Repeat the process to craft the second rice waffle.
  • Make the Marinade:
  • Whisk together soy sauce, rice vinegar, sesame oil, and freshly minced ginger in a mixing bowl.
  • Toss sushi-grade tuna and salmon cubes into the marinade, ensuring they are coated well. Let them marinate for a tantalizing 5-10 minutes.
  • Assemble the Sushi Waffles:
  • Begin with a lush layer of mashed avocado, setting the foundation for the sushi waffle.
  • Add a generous layer of the marinated sushi-grade tuna and salmon mixture, infusing the waffle with vibrant flavors.
