In a large pot, combine the sliced ginger, ground cardamom, cloves, and orange zest. Pour in 3 liters of water and bring to a boil over medium-high heat.
Lower the heat and let the mixture simmer for 30 minutes to infuse it with flavor. Remove from heat and allow it to cool.
Meanwhile, in a separate pot, combine the honey and spring water. Stir constantly over medium-high heat until all the honey has dissolved.
Let the mixture simmer for 10 minutes before removing from heat and allowing it to cool to room temperature.
Once cooled, pour the honey-water mixture into a sanitized glass jug or plastic fermenter. Add in the cinnamon sticks and stir.
Sprinkle the yeast evenly on top of the liquid and cover the jug or fermenter with a clean cloth or lid.
Store the jug or fermenter in a cool, dark place for at least two weeks to allow for fermentation. The longer it ferments, the stronger and more alcoholic the mead will be.
After two weeks, use a sanitized siphon to transfer the mead into clean glass bottles. Seal with corks or bottle caps and store in a cool place for at least four months to allow the flavors to fully develop.
When ready to serve, chill the mead and pour into glasses. For added flavor and presentation, garnish each glass with a cinnamon stick.
