Ingredients

  • 1 tsp ginger minced
  • 1 tablespoon fish sauce
  • 2 tsp sugar
  • 1/3 cup carrots minced
  • 1/4 cup chopped fresh mint
  • 1/2 lb ground beef
  • 1/4 tsp pepper
  • 1 tsp cilantro minced
  • 1 oz dried shitake mushroom
  • 2 tsp garlic minced
  • 2 tbsp light soy sauce
  • 1/2 tbsp rice vinegar
  • 1 tbsp green onion minced
  • Dipping Sauce
  • 1/2 tbsp rice vinegar
  • 1/2 tbsp sugar
  • 1 tbsp chili oil
  • 2 tbsp light soy sauce
  • 1 tsp sesame oil

Instructions

  • n a bowl, mix minced ginger, fish sauce, sugar, chopped mint, ground beef, pepper, minced cilantro, dried shiitake mushrooms, minced garlic, light soy sauce, rice vinegar, and minced green onion.
  • Exclude the carrots for now. Let it sit for at least 15 minutes.
  • Heat 2 tbsp neutral oil in a pan over medium heat.
  • Fry minced carrots for 2 minutes.
  • Add the seasoned filling to the pan with carrots.
  • Cook, stirring sometimes until fully cooked.
  • Once the filling cools, soak the rice paper for 5-10 seconds in warm water.
  • Place the rice paper on a flat surface
  • Put 2.5 tbsp of cooked filling in the center of the rice paper.
  • The top should be folded in the direction of the middle.
  • Next, fold the right and left sides inward.
  • Folding everything over the bottom at the end.
  • Once again, wrap the already-wrapped dumpling with an --additional sheet of rice paper.
  • Heat enough neutral oil in a pan over medium heat.
  • Once the oil is hot, place the rice paper dumplings on the pan, with the unfolded side upwards.
  • You can slowly press down with a spatula for even cooking.
  • Fry until both sides are golden brown.
  • Preparing the Dipping Sauce:
  • In a separate bowl, mix rice vinegar, sugar, chili oil (add sesame seeds if desired), light soy sauce, and sesame oil.
  • Serve the dumplings with the dipping sauce.
