Ingredients

  • 250 g red onions
  • 250 g white onions
  • 250 ml red wine vinegar
  • 1 teaspoon black pepper
  • 1 Bay leaf
  • Salt to taste

Instructions

  • Start by preparing the onions - Peel and cut the red onions and white onions into thin slices. Set aside.
  • In a large saucepan, combine the red wine vinegar, sugar, black pepper, bay leaf, and salt. Bring it to a boil over medium-high heat.
  • Add in the sliced onions to the boiling mixture and cook for 10 minutes until they start to soften.
  • Reduce the heat to low and let it simmer for another 15 minutes or until the liquid has reduced by half.
  • Once done, remove from heat and let it cool completely before transferring it to a jar.
  • Serve as an accompaniment to your favorite dishes or store in an airtight jar in the fridge for up to 2 weeks.

Notes

  • Use fresh red onions for the best flavor.
  • For a spicier pickle, add extra chili flakes or a pinch of cayenne pepper.
  • If you don’t have all the spices on hand, feel free to omit or substitute with what you have.
  • You can also add other spices to the pickle, such as garlic or ginger.
  • If you don’t have an air-tight jar, you can store the pickles in a bowl covered with plastic wrap.
