Ingredients

  • 1 cup pumpkin puree
  • 3 cups of milk
  • Almonds optional
  • 4 tablespoons maple syrup
  • 2 teaspoons pumpkin spice
  • 8 packs Quaker Maple & Brown Sugar Instant Oatmeal
  • 8 tablespoons raw cane sugar
  • salt according to taste

Instructions

  • Begin by cooking the pumpkin puree in a medium saucepan over medium-high heat for approximately 3-4 minutes. This step helps to eliminate excess water and intensify the pumpkin flavor.
  • Pour in milk and stir well with the pumpkin puree, then increase the heat to high until it reaches a rolling boil.
  • Once boiling, add in 8 packets of Quaker Maple & Brown Sugar Instant Oatmeal and mix thoroughly.
  • Reduce the heat to medium-low and let the oatmeal simmer for 5-6 minutes while stirring occasionally. This process allows the oatmeal to fully absorb all the flavors and thicken up.
  • Add maple syrup and pumpkin spice after about 5 minutes of simmering, then mix well to incorporate.
  • Remove from heat once the oatmeal has reached your desired consistency and let it cool for a few minutes. Serve in bowls and top with any desired toppings such as sliced almonds or extra maple syrup.

Notes

  • For a creamier oatmeal, use a 1:2 ratio of pumpkin puree to milk.
  • You can also make this oatmeal in a slow cooker by adding all the ingredients (except for toppings) to the crockpot and cooking on low for 2-3 hours or high for 1 hour.
  • For added protein, you can stir in some Greek yogurt or add a scoop of your favorite protein powder to the oatmeal.
