Begin by mixing 2 tablespoons of dry active yeast with 1/2 cup of warm milk and 1 teaspoon of granulated sugar in a small bowl. Let this rest for approximately 5 minutes until it becomes foamy.
In a separate mixing bowl, combine the wet ingredients – 2 beaten eggs, 1/4 cup melted butter, 1/4 cup granulated sugar, 2 tablespoons of molasses, and 2 tablespoons of honey. Add 1/3 cup of canned pumpkin and whisk all the ingredients together until they are well combined.
In a large mixing bowl, combine the dry ingredients – 4 cups of all-purpose flour, 4 cups of bread flour, 1 cup of vital wheat gluten, 1/2 teaspoon of salt, and 3 tablespoons of ground cinnamon. Use a whisk or electric mixer to ensure that all the dry ingredients are thoroughly mixed.
