Instructions

  • Thinly slice the onions.
  • Finely mince the garlic cloves.
  • Wash and slice the assorted bell peppers into thin strips, removing the seeds and white membranes.
  • Heat the vegetable oil in a large skillet or frying pan over medium heat.
  • Add the thinly sliced onions to the heated skillet and sauté them until they turn soft and start to caramelize, which usually takes about 8-10 minutes. Stir occasionally.
  • Once the onions have softened, add the minced garlic, dried oregano, crushed red pepper flakes, granulated sugar, salt, and pepper according to your taste preferences. Mix well to combine all the ingredients.
  • Add the sliced bell peppers into the skillet with the onion mixture. Stir to combine all the ingredients.
  • Cook the bell peppers with the onion mixture for approximately 10-15 minutes or until they become tender but still slightly crisp. Stir occasionally to ensure even cooking.
  • Once the peppers have reached the desired tenderness, drizzle the red wine vinegar over the mixture in the skillet. Stir to incorporate the vinegar evenly.
  • Remove the skillet from heat and transfer the sweet pepper mixture to a serving dish.

Notes

  • Choose bell peppers that are firm, shiny, and have vibrant colors. The sweetness and flavors intensify as they ripen.
  • If you prefer a milder dish, reduce the amount of crushed red pepper flakes. Conversely, add more if you enjoy an extra kick.
  • While the recipe calls for dried oregano, feel free to experiment with other herbs like thyme, basil, or rosemary to customize the flavors.
