1/2literof 190-proof neutral-grain alcohol
1 1/2cupsof granulated sugar
1 1/2litersof apple juice
1/2teaspoonof ground nutmeg
1 1/2litersof apple cider
2sticks of cinnamon
1/2cupof brown sugar
2tspof yeast
A few drops of vanilla extract
Instructions
In a large pot, combine the 190-proof neutral-grain alcohol and granulated sugar. Heat over medium-low heat, continuously stirring until the sugar is completely dissolved. Remove from heat and let it cool down to room temperature.
Over medium heat, mix together the apple juice, apple cider, ground nutmeg, cinnamon sticks, and brown sugar in a separate large pot. Bring the mixture to a low boil.
Once both mixtures have cooled down, combine them in a large container or carboy. Add in the yeast and vanilla extract.
Cover the container with a lid and let it ferment for about 3 days. During this time, make sure to give the mixture a daily stir to aid in the fermentation process.
After 3 days, strain the moonshine through cheesecloth to remove any remaining solids. Transfer it to a clean container and let it age for at least 2 weeks. Remember, patience is key here; the longer it ages, the smoother and more flavorful it will become.
