Equipment

Ingredients

  • 1 tablespoon fresh garlic (minced)
  • 1-2 tablespoons olive oil
  • 1 tablespoon agave syrup
  • 3/4 cup roasted red pepper (chopped)
  • 1 tablespoon of lime juice
  • 1/3 cup of fresh orange juice
  • 1 tablespoon of cumin
  • 2 tablespoon chipotle powder
  • 1 cup smoked meat (chopped)
  • 1 small-sized onion (chopped)
  • 4 cups cooked black beans
  • 1 cup of broth or stock

Instructions

  • Heat the olive oil in a large pot over medium-high heat.
  • Add garlic and onion to the pot and sauté until they are soft and fragrant, about 3 minutes.
  • Add agave syrup, roasted red pepper, lime juice, orange juice, cumin, and chipotle powder to the pot.
  • Stir everything together and simmer for about 5 minutes.
  • Add the smoked meat and black beans to the pot and stir to combine.
  • Pour in enough broth or stock until the beans are covered. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25 minutes.
  • Remove from heat and serve with desired toppings such as sliced avocado, sour cream, and cilantro.

Notes

- Make sure to stir the beans occasionally as they cook to prevent them from sticking to the bottom of the pot.
- For a spicier version, add some extra chipotle powder or chopped jalapeños.
- To make this dish vegan, use vegetable broth instead of chicken stock and omit the smoked meat.
- You can also add other ingredients such as diced tomatoes, corn, or bell peppers.
