- 1.5 cups shredded or chopped cooked chicken
- 5 ounces chicken soup cream
- 5 ounces Rotel tomatoes
- 1/2 medium peeled and diced yellow onion
- 1/2 cup sour cream
- 1 cup shredded Mexican cheese blend
- 1/2 tablespoon butter
- 7.2 ounces Nacho Cheese Doritos 1 party-size bag
- 1/2 clove minced garlic
- 2 ounces diced green chiles
- 1/2 tablespoon taco seasoning 1 packet
- 7.5 ounces canned corn drained
- 7.5 ounces canned black beans drained and rinsed
- For garnish finely chopped fresh parsley
Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray.
In a skillet, cook ground chicken over medium heat until no longer pink. Drain any excess fat.
Add minced garlic, diced onion, and diced green chiles to the skillet with cooked chicken. Cook for an additional 2-3 minutes until vegetables are softened.
Stir in cream of chicken soup, sour cream, taco seasoning, and Rotel tomatoes into the skillet until well combined. Allow it to simmer for about 5 minutes.
Next, spread half of the crushed Doritos on the bottom of your prepared baking dish.
Top with half of the chicken mixture, followed by half of the corn and black beans.
Sprinkle 1 cup of shredded cheese on top of the layers, then repeat layering process one more time, ending with a final sprinkling of cheese on top.
Bake for 25-30 minutes or until bubbly and cheese is melted and golden brown on top.
Serve hot, garnished with chopped fresh parsley if desired. Enjoy!
- You can use any type of Doritos for this casserole. Try using nacho cheese, barbecue, or even cool ranch flavored Doritos for a different flavor
- To make sure the casserole is cooked through, use a thermometer to check the internal temperature. The casserole should be at least 165 degrees when it is done.
