Ingredients

  • 1.5 cups shredded or chopped cooked chicken
  • 5 ounces chicken soup cream
  • 5 ounces Rotel tomatoes
  • 1/2 medium peeled and diced yellow onion
  • 1/2 cup sour cream
  • 1 cup shredded Mexican cheese blend
  • 1/2 tablespoon butter
  • 7.2 ounces Nacho Cheese Doritos 1 party-size bag
  • 1/2 clove minced garlic
  • 2 ounces diced green chiles
  • 1/2 tablespoon taco seasoning 1 packet
  • 7.5 ounces canned corn drained
  • 7.5 ounces canned black beans drained and rinsed
  • For garnish finely chopped fresh parsley

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray.
  • In a skillet, cook ground chicken over medium heat until no longer pink. Drain any excess fat.
  • Add minced garlic, diced onion, and diced green chiles to the skillet with cooked chicken. Cook for an additional 2-3 minutes until vegetables are softened.
  • Stir in cream of chicken soup, sour cream, taco seasoning, and Rotel tomatoes into the skillet until well combined. Allow it to simmer for about 5 minutes.
  • Next, spread half of the crushed Doritos on the bottom of your prepared baking dish.
  • Top with half of the chicken mixture, followed by half of the corn and black beans.
  • Sprinkle 1 cup of shredded cheese on top of the layers, then repeat layering process one more time, ending with a final sprinkling of cheese on top.
  • Bake for 25-30 minutes or until bubbly and cheese is melted and golden brown on top.
  • Serve hot, garnished with chopped fresh parsley if desired. Enjoy!

Notes

  •  You can use any type of Doritos for this casserole. Try using nacho cheese, barbecue, or even cool ranch flavored Doritos for a different flavor
  • To make sure the casserole is cooked through, use a thermometer to check the internal temperature. The casserole should be at least 165 degrees when it is done.
  • For a heartier casserole, you can add chopped bell peppers or jalapenos.
  • To make the casserole ahead of time, you can assemble it and store it in the refrigerator until you are ready to bake it.
  • To make the casserole vegetarian, you can substitute the ground chicken with crumbled tofu
  • To make the casserole even cheesier, you can add additional cheese on top before baking.
