Oven
Large skillet
Baking sheet
- 1 tsp honey
- 1 lb. ground beef
- 1 tbsp onion
- 2 Italian seasoning
- 1/2 tbsp Worcestershire sauce
- 3 cloves garlic
- 3 cloves garlic
- 8 oz shredded mozzarella cheese
- 8 oz shredded mozzarella cheese
- 8 oz fresh spinach
- 3 eggs
- 14 oz can cream-style cottage cheese
Preheat your oven to 350 degrees F (175 degrees C). In a large skillet, cook the ground beef or sausage with the onion over medium-high heat until it has browned. Once cooked through, season with Italian seasoning and garlic cloves.
Now add the Worcestershire sauce and tomato sauce, stirring until everything is well mixed together. Then reduce the heat to low and simmer for 10 minutes. Grease a 9×13 baking dish with butter or cooking spray and spread a layer of cooked noodles across the bottom.
Add the cooked meat mixture over top, followed by the mushrooms and spinach. In a separate bowl, whisk together the eggs with cottage cheese and honey until well blended.
Pour this mixture over top of the lasagna and spread evenly across the top layer. Sprinkle with mozzarella cheese and bake in preheated oven for 30 minutes, or until heated through and bubbly. Let cool for 10-15 minutes before serving.
• For a protein-packed lasagna, you can use ground turkey instead of beef or sausage.
• To make dairy-free, replace the mozzarella cheese with vegan cheese and use almond milk instead of cream on top.
• If you’d like to add more vegetables, feel free to mix in diced bell peppers, zucchini, or other vegetables of your choice.
