Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the extra virgin olive oil, roasted garlic powder, smoked Spanish paprika, organic onion powder, dried thyme leaves, Tellicherry black pepper, and organic cayenne pepper. Mix well until all the spices are thoroughly incorporated into the olive oil.
Take the boneless, skinless chicken breast halves and pat them dry using paper towels. This helps the spice mixture to adhere better to the chicken.
Season the chicken breasts with pink Himalayan salt and freshly ground rainbow peppercorns according to your taste preferences.
Dip each seasoned chicken breast into the prepared spice mixture, ensuring they are evenly coated. Let any excess drip off.
Once coated, dredge the chicken breasts in the organic unbleached all-purpose flour, shaking off any excess flour.Place the coated chicken breasts on a baking dish or sheet pan lined with parchment paper or lightly greased to prevent sticking.
Bake the chicken breasts in the preheated oven for approximately 25-30 minutes or until they reach an internal temperature of 165°F (74°C) and the coating is crispy and golden brown.
Once done, remove the baked chicken breasts from the oven and let them rest for a few minutes before serving to allow the juices to redistribute. Serve the Patti LaBelle-style baked chicken hot and enjoy!
Notes
Make sure to evenly coat the chicken in the spice mixture so that it cooks evenly.
Be sure to grease the baking dish with the olive oil so that the chicken doesn’t stick.
If you don’t have any lemon juice, you can use white wine or apple cider vinegar instead.
If you want a spicier dish, you can add some red pepper flakes to the spice mixture.
You can also add other herbs and spices to the dish such as oregano, thyme, or rosemary.
You can serve the chicken with rice and vegetables or a side salad.
