Ingredients

  • 12 ounces Egg Fettuccine
  • 1 pound medium shrimp, peeled and deveined
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • 1 1/2 cups sliced mushroom
  • 1/2 cup diced tomato
  • 1/3 cup freshly grated parmesan Cheese
  • 4 green onions, sliced
  • 1 teaspoon Cajun seasoning
  • 1/4 cup diced green pepper
  • 12 ounces of andouille sausage, sliced
  • 1 teaspoon lemon juice
  • 1 1/2 tablespoons fresh parsley, chopped
  • 1/4 cup diced yellow pepper
  • 8 tablespoons butter, divided
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  • Fill a large pot with water. Bring to a boil over high heat and add fettuccine. Cook for 8-10 minutes or until done. Drain and set aside.
  • Heat 4 tablespoons of butter in a large skillet over medium heat. Add shrimp, green onion, garlic, mushroom, bell peppers, diced tomato, and Cajun seasoning. Cook for 5-7 minutes or until shrimp is cooked through.
  • Add cream, smoked paprika, lemon juice, and 2 tablespoons of butter to the skillet. Simmer for 5 minutes.
  • Add parmesan cheese and parsley to the skillet and stir to combine. Taste and adjust the seasoning with salt and pepper.
  • Add cooked fettuccine to the skillet and simmer for another 5 minutes or until the sauce is thickened. Serve hot.

  • Try adding other vegetables like broccoli, asparagus, spinach or red peppers for a more flavorful dish.
  • You can substitute Andouille sausage with chorizo or any other type of sausage.
  • You can add more or less Cajun seasoning to adjust the level of spiciness to your preference.
