Ingredients

For the soup

  • 1 yellow onion
  • 2 cloves Garlic
  • 4 tsp Unsalted butter
  • 10 ounces Cream of chicken
  • 14.5 ounces Diced tomatoes
  • 14 ounces of Cream corn
  • 4 tsp Ground cumin
  • 1 1/2 tbsp Chili powder
  • 1 tbsp Paprika
  • 1 tsp Onion powder
  • tsp Cayenne powder
  • 2 cups Shredded rotisserie chicken
  • 1 carton of chicken broth or stock 30 ounces
  • 1 cup Half and half
  • Salt and pepper

For topping

  • 1 tbsp Pico de gallo
  • 2 tsp Shredded Monterey Jack
  • 2 tsp Sour cream
  • 1 tbsp Tortilla strips
  • 1 tbsp Sliced avocado

Instructions

  • Saute onion & garlic in butter
  • Add cream of chicken, tomatoes, corn, spices & simmer for 5 mins.
  • Stir in chicken, broth/stock & half-and-half (optional). Simmer for 10 mins.
  • Add salt & pepper to taste.
  • Add toppings!

Notes

  • Use rotisserie chicken to save time.
  • Add more vegetables such as bell peppers, corn, or carrots for extra flavor and nutrition.
  • You can adjust the level of heat by adding or reducing the amount of chili powder and cayenne powder.
  • For a creamy soup, use half-and-half or cream instead of chicken broth.
