Equipment

Ingredients

  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup butter softened
  • 2 large eggs
  • 1/2 teaspoon teaspoon baking powder
  • 2 teaspoon teaspoons almond extract
  • 4 oz melted chocolate chips
  • 1 1/3 cup sugar

Instructions

  • Preheat oven to 375°F and line a baking sheet with parchment paper. In a bowl, whisk together the flour, salt, baking powder, and sugar until combined.
  • Add in the butter and mix with a spoon or pastry cutter until you have pea-sized chunks of butter throughout the dry ingredients. In a separate bowl, whisk together the eggs and vanilla until combined.
  • Pour the egg mixture into the butter-flour mixture and stir together until everything is well combined. Divide the cookie dough in half and add melted chocolate chips to one of the halves. Stir together until fully incorporated.
  • Take a piece of parchment paper and roll out each half of the dough into a rectangle that is about 1/4 inch thick. Place one sheet of cookie dough on top of the other, pressing down slightly to create an even layer.
  • Using a pizza cutter or sharp knife, cut the cookie dough into long strips (about 1 inch wide) and then twist the strips to form pinwheels.
  • Place the cookie dough on a prepared baking sheet and bake for about 10 minutes or until golden brown. Allow cooling for 5-10 minutes before serving.

Notes

  • You can substitute almond extract with other extracts such as orange, lemon, or peppermint.
  • If you don’t have chocolate chips on hand, you can use chopped nuts or dried fruits as a substitute.
  • You can also roll out the cookie dough between two pieces of parchment paper to make it easier.
