Ingredients

For Cake

  • 1 cup Butter Flavored Crisco
  • 2 Eggs
  • 1 ½ cups cups Granulated Sugar
  • 1 ½ cup Milk,
  • 3 cups All-Purpose Flour
  • 2 teaspoons Vanilla Bean Paste
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder

For Coating

  • ½ cup Butter Flavored Crisco
  • 1 cup Turbinado Sugar

To Top

  • Fresh Raspberries
  • Vanilla Ice Cream

Raspberry Sauce

  • 1 cup Fresh Raspberries
  • ½ cup Water
  • 1 tablespoon Sugar

Instructions

  • Preheat oven to 350°F and lightly grease a 9-inch round cake pan with nonstick cooking spray. In a medium bowl, cream together Crisco and sugar until light and fluffy. Beat in eggs one at a time then add in the milk and vanilla bean paste and mix for two minutes on medium speed.
  • In a separate medium bowl, sift together the flour, salt and baking powder. Gradually add the dry ingredients to the wet ingredients while mixing on low speed until combined.
  • Pour batter into greased cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. For the coating, melt the Crisco in a pan over medium heat. Add turbinado sugar and stir until combined and slightly thickened about 3 minutes.
  • Take the cake out of the oven and while still hot, pour melted Crisco mixture over top of the cake, evenly distributing it over the top and sides. To make the raspberry sauce, add raspberries, sugar and water to a small pot over medium heat. Simmer for 10 minutes or until thickened, stirring occasionally.
  • Serve slices of Mastro’s Butter Cake with fresh raspberries on top and a scoop of vanilla ice cream drizzled with raspberry sauce.

Notes

• For the best results, use room-temperature ingredients for your cake batter.
• Don’t overmix the batter, or it can become tough and dense.
• Be sure to evenly distribute the melted Crisco mixture over the top of the cake before baking. 
• If you want an extra boost of flavor, add some fresh lemon or orange zest to the cake batter.
• Serve slices of Mastro’s Butter Cake with a scoop of whipped cream or ice cream for a decadent dessert.
