Ingredients

  • 1.5 cups of flour
  • 1/2 tsp baking powder
  • 1/2 cup of water
  • 1/4 cup of olive oil
  • 1/2 tablespoon of sugar
  • 1/2 tsp of salt
  • 1/2 tbsp of yeast
  • Ingredients for Vegetable mix
  • Beans
  • Spinach
  • 1 large tomato
  • 1 big onion
  • 1 tbsp sumac
  • 2 tbsp olive oil
  • 1.5 tbsp lemon juice
  • Ingredients for the Meat filling
  • 1/3 tsp of loads
  • 2 tbsp cooking oil
  • Ground beef
  • 1 large onion
  • 1/2 tsp of cinnamon powder
  • 1/2 tsp of black pepper
  • 1/4 cup parsley
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/8 tsp ground nutmeg
  • 1/4 tsp garlic powder
  • 1 spoon of salt
  • 1 tbsp of pomegranate sauce

Instructions

  • In a large bowl, mix together flour, baking powder, and salt until well combined.
  • Pour in warm water and olive oil to the dry ingredients and mix until a dough forms.
  • Knead the dough for 5-7 minutes until it is smooth and elastic.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.
  • While the dough is resting, prepare the filling by sautéing spinach, beans, and tomatoes with olive oil until tender. Add in sumac and lemon juice to enhance the flavors. Set aside to cool.
  • In a separate pan, brown ground beef over medium heat and add onion, parsley, cumin, coriander, cinnamon powder, nutmeg, garlic powder, salt, and pepper to create a flavorful meat filling. Set aside.
  • Divide the dough into four equal pieces and roll them into thin rounds.
  • Spoon a mixture of vegetables and meat onto each round, folding up the edges to form small pockets with the filling inside.
  • In a heated skillet with oil, cook the fatayer for 3-4 minutes on each side until the dough is golden brown and the filling is heated through.
  • Serve warm and enjoy!

Notes

  • Use a light hand when rolling out the dough, as it can become tough if it is overworked.
  • Make sure the filling is cooked through before adding it to the dough.
  • Add a tablespoon of oil to the skillet before cooking the fatayer to prevent sticking.

  • Serve the fatayer with a dollop of yogurt or tahini sauce for extra flavor.
  • Use a variety of fillings to switch things up, such as ground lamb, feta cheese, or spinach.
  • To make the fatayer vegan, simply omit the ground beef and use a combination of vegetables.
