Ingredients

  • 3 cups vegetable oil
  • 1 cup rice flour
  • 1 cup roasted macadamia nuts
  • 1/2 tsp salt
  • 1/4 cup sugar

Instructions

  • Gather all the necessary ingredients and measure them out. Chop the macadamia nuts into small pieces to create a crunchy texture.
  • In a large bowl, combine the rice flour, salt, and sugar until fully blended. Slowly mix in the chopped macadamia nuts until an even mixture is formed. Add in vegetable oil while stirring continuously.
  • Take a handful of the mixture and shape it into a ball. Place on a plate lined with parchment paper or plastic wrap and repeat until all okoshi is formed.
  • Heat up the oil in a pot until 375°F (190°C) before carefully dropping several balls of the okoshi in. Fry for 5 minutes, flipping them over as necessary to ensure even cooking. Once finished, place the okoshi on a paper towel-lined plate and let it cool.
  • Serve up the okoshi as a crunchy snack or use it as a topping for your favorite dishes!

  • For an even crunchier okoshi, try coating it with panko breadcrumbs before frying.
  • For a sweeter version, add in a tablespoon of honey or molasses when mixing together the ingredients.
  • Feel free to experiment with different types of nuts such as almonds, walnuts, or peanuts.
  • You can also add in other ingredients like dried fruit, spices, or even chocolate chips for a more unique flavor.
