Ingredients

  • 1/4 cup mirin
  • 1/2 cup soy sauce
  • 1/4 cup dark brown sugar
  • 2 tablespoons sake
  • 1 teaspoon toasted sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger

Instructions

  • In a medium saucepan, combine the mirin, soy sauce, dark brown sugar, sake, sesame oil, and garlic.
  • Over medium-high heat, bring to a boil, and then reduce the heat to low. Simmer for about 10 minutes until the mixture thickens slightly and reduces by about one-third.
  • Remove from heat and stir in the fresh ginger. Allow cooling before transferring to a jar or container with a lid. Refrigerate until needed.

Notes

  • When buying mirin, make sure to purchase the original or sweet version and not the “hon-mirin” which is a substitute made with corn syrup.
  • If you don’t have sake available, you can replace it with dry sherry or white wine.
  • The teriyaki sauce will last for up to a month when stored in the refrigerator.
  • Use fresh ginger for the best flavor, but you can also add a teaspoon of ground ginger if you don’t have any fresh on hand.
