Instructions

  • Cook bacon in a large pot over medium-high heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
  • Add minced garlic and diced onion to the pot with the bacon grease. Sauté until fragrant and softened, around 5 minutes.
  • Add diced celery, bay leaves, thyme leaves, and carrots to the pot. Stir well and cook for an additional 5 minutes.
  • Add cubed potatoes to the pot and stir to combine with other ingredients.
  • Pour in chicken broth and whole milk, stirring well to incorporate all ingredients.
  • Bring soup to a boil, then reduce heat and let it simmer for 20 minutes or until potatoes are tender.
  • Gradually add roux (flour and water mixture) to the soup, stirring constantly to thicken the soup.
  • Stir in grated cheddar cheese until fully melted and incorporated into the soup.
  • Add salt, pepper, and crumbled bacon for additional seasoning and crunch.
  • Allow soup to simmer for an additional 10 minutes, then remove bay leaves before serving.
