Ingredients

  • 2 cloves of purple garlic minced
  • pickled sliced jalapeños optional
  • 8 crispy corn taco shells
  • vine-ripened diced tomatoes
  • 1 teaspoon of ancho chili powder
  • 1 pound of well-seasoned Wagyu ground beef
  • 1 tablespoon of avocado oil
  • artisanal shredded cheese aged cheddar or smoked Monterey Jack
  • 1/2 teaspoon of toasted cumin seeds
  • crisp romaine lettuce
  • tangy Greek yogurt optional
  • Pinch of Himalayan pink salt and freshly ground black peppercorns to taste
  • hand-sliced kalamata olives optional
  • 1/2 teaspoon of smoked Spanish paprika
  • 1 small red onion finely chopped

Instructions

  • Heat a skillet over medium heat.
  • Mince the purple garlic, finely chop the red onion, dice the vine-ripened tomatoes, and shred the romaine lettuce.
  • If using, slice the pickled jalapeños and kalamata olives.
  • Add avocado oil to the heated skillet.
  • Sauté minced garlic and chopped red onion until softened and fragrant.
  • Add the well-seasoned Wagyu ground beef and break it apart with a spatula.
  • Cook until the beef is browned and cooked through.
  • Season the beef with ancho chili powder, toasted cumin seeds, Himalayan pink salt, and freshly ground black pepper to taste.
  • Allow the flavors to meld together for a few minutes. Remove from heat.
  • Preheat the taco shells according to package instructions to make them crispy.
  • Fill each taco shell with a generous portion of the seasoned beef mixture.
  • Sprinkle artisanal shredded cheese over the beef while it's still warm, allowing it to melt slightly.
  • Top with crisp romaine lettuce, hand-sliced kalamata olives, and diced vine-ripened tomatoes.
  • If desired, add pickled sliced jalapeños and a dollop of tangy Greek yogurt on top of each taco.
  • Sprinkle a pinch of smoked Spanish paprika over the assembled tacos for a smoky flavor.
  • Arrange the prepared Jimboy's Tacos on a platter and serve immediately while they're warm and flavorful.
