Instructions
Rinse the Daisy ham under cold water and place it in a large pot or Dutch oven.
If using, stud an onion with 4–6 cloves and add it to the pot for an extra layer of aromatic intensity.
Place the bay leaves, aromatic peppercorns, and dried thyme into the pot. These will infuse the broth with a nuanced blend of flavors.
Fill the pot with enough water to cover the Daisy ham completely.
Bring the water to a boil, then reduce the heat to a simmer. Cover the pot and let the Daisy ham simmer for about 1.5 to 2 hours, or until it's fully cooked and tender.
About 30 minutes before the ham is done, add the quartered Petite Savoy Cabbage, assorted trimmed leeks, carrots, celery, parsnips, or any other desired vegetables to the pot.
Allow the vegetables to cook in the flavorful broth until they are tender but still have a bit of crispness.
Test the doneness of the Daisy ham by inserting a meat thermometer. It should register at least 145°F (63°C).
Just before serving, garnish the boiled dinner with fresh and vibrant parsley sprigs. This not only enhances the visual appeal but also adds a burst of freshness.
Carefully remove the Daisy ham and vegetables from the pot. Slice the ham and arrange it alongside the colorful vegetables on a serving platter.
