Ingredients

  • 2 pounds of ground mild Italian sausage
  • 1 tablespoon of Italian Seasoning
  • 2 pounds of ground hot Italian sausage
  • 2 cups of bread crumbs
  • 1 tablespoon of Fennel seeds
  • 2 pounds of ground beef
  • 2 tablespoons of chopped garlic
  • 3 tablespoons of onion salt
  • 6 pounds of ground pork
  • Olive oil for frying
  • 3 tablespoons of black pepper
  • 3 tablespoons of garlic powder
  • 3 tablespoons of oregano
  • Optional: Provolone cheese slices and tomato sauce

Instructions

  • Mix mild and hot Italian sausages, ground beef, and ground pork in a large bowl.
  • To the meat mixture, add chopped garlic, Italian seasoning, fennel seeds, bread crumbs, garlic powder, onion salt, oregano, and black pepper. Mix until well distributed.
  • Roll the meat mixture into 2-3 inch diameter meatballs.
  • In a large skillet, heat olive oil over medium-high heat.
  • Cook meatballs in the skillet until browned on all sides, about 8-10 minutes.
  • If desired, place provolone cheese and tomato sauce on meatballs. Cover and melt cheese for 1-2 minutes.
  • Serve the meatballs on a warm roll or bread. Optionally, add sautéed peppers, onions, pickled veggies, or hot giardiniera for extra flavor.

Notes

  • For convenience, you can use pre-made Italian sausage instead of combining ground meats and seasonings.
  • If you prefer a spicier Hot Dago, use all hot Italian sausage or add red pepper flakes to the meat mixture.
  • You can substitute ground turkey or chicken for a lighter version of this sandwich.
  • Make sure to cook the meatballs until they reach an internal temperature of 165°F to ensure they are fully cooked.
  • Don't overcrowd the skillet when cooking the meatballs, as this will prevent them from browning evenly. Cook in batches if necessary.
  • You can also bake the meatballs in the oven at 375°F for 20-25 minutes instead of frying them.
