- 2 tablespoons extra virgin olive oil
- 1/4 cup freshly chopped dill
- 1 teaspoon lemon zest
- 1 tablespoon finely chopped fresh parsley optional but adds freshness
- 1/2 tablespoon crushed dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup seasoned breadcrumbs or almond flour for a low-carb version
- 2 cloves garlic finely minced
- 1/4 large red onion finely diced
- 1 large egg
- 1 lb ground turkey 93/7 lean preferred
Step 2: Prepare the Mixture
In a large bowl, combine the ground turkey, minced garlic, diced onion, breadcrumbs, dill, parsley, oregano, lemon zest, salt, and pepper. Then, add one egg.
Mix gently but thoroughly. Over-mixing can make the meatballs tough, and that’s not what we want! Trust me; you can feel your way to the right consistency.
Step 3: Shape the Meatballs
Now, it’s time to roll those meatballs. Use your hands to grab a small portion of the mixture and roll it into a ball, about the size of a golf ball.
Place each ball on the baking sheet, spaced out to ensure they cook evenly. You should yield about 16-20 meatballs, depending on your sizing.
Step 4: Bake
Pop the baking sheet in the oven. Bake for 20–25 minutes, or until the meatballs are golden brown. A meat thermometer should read 165°F (74°C) when done.
The aromas that fill your kitchen during this time are sure to make your mouth water!
- Opt for lean ground turkey to reduce calories but maintain moisture.
- Use fresh herbs whenever possible for the best flavor; dried herbs work too but may lose some punch.
- To keep the meatballs moist, consider adding a little grated zucchini or carrot to the mix.
- If you can, let the mixture chill before shaping it; this helps the flavors meld together.
- If you’re making a large batch, remember that these meatballs freeze beautifully. Just thaw and reheat!
