Ingredients

  • 1 1/2 cups shredded cheese
  • 1/4 cup milk
  • 1 cup macaroni cooked
  • 1/4 teaspoon salt
  • 8 ounces sliced mushrooms such as button or oyster
  • 1 tablespoon olive oil or butter
  • 1/4 cup chopped green onions
  • 8 ounces diced tomatoes

Instructions

  • Preheat the oven to 350°F and lightly grease an 8″x8″ baking dish with cooking spray or butter. In a large pot, cook macaroni according to package directions; drain and set aside.
  • In a medium saucepan, heat olive oil or butter over medium-high heat. Add mushrooms, green onions and diced tomatoes; cook for about 5 minutes or until vegetables are lightly browned.
  • Add cooked macaroni, shredded cheese, milk and salt to the saucepan; stir until cheese is melted and ingredients are combined.
  • Pour the macaroni mixture into the prepared baking dish and bake for about 20 minutes or until the cheese is melted and bubbly. Allow macaroni and cheese to cool for 10 minutes before serving.

Notes

  • For a healthier version, use whole wheat pasta instead of regular macaroni noodles.
  • To add a bit more flavor, you can also add garlic, herbs or spices to the macaroni mixture before baking.
