Instructions
In a large pot, heat vegetable oil over medium heat.
Add diced onions and sauté until translucent.
Stir in minced garlic and ginger, cooking for 1-2 minutes.
Add crispy roast pork and small shrimp, and cook for another 5 minutes.
Combine patis, white vinegar, and tomato paste. Mix well, adding salt to taste.
Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 10-15 minutes.
Introduce long eggplants, long beans, and bitter melons. Let it simmer for 5-7 minutes.
Serve with steamed rice and enjoy the unique flavors of sari-sari!
Notes
For a vegetarian option, you can omit the pork and shrimp and add tofu or more vegetables.
To make it sweeter, increase the amount of sugar. Conversely, if you prefer it less sweet, reduce the sugar content.
Adjust the amount of salt and vinegar to your taste preference.
For a thicker soup, you can add cornstarch mixed with water to the pot and let it simmer for an additional 5 minutes.
