Eggless Apple Pie

Ingredients

  • 1/2 cup all-purpose flour – 62.5 grams
  • 1/4 cup olive oil or sunflower oil
  • 1 cup whole wheat flour – 120 grams
  • 1/3 cup water – at room temperature or add as required
  • 1/2 teaspoon salt or as required
  • 2 2 apples, peeled, cored and sliced
  • 1/4 teaspoon ground cinnamon
  • 1 to 2 teaspoons oil or vegan butter

Instructions

  • To make the eggless apple pie crust, first sift together all-purpose flour and whole wheat flour in a large bowl. Now add the oil, water and salt to the flours and mix until it forms a soft dough. Do not overmix or knead the dough.
  • Divide the dough into two equal parts and roll each part into a round disc. Wrap the discs in cling wrap or plastic wrap and refrigerate for at least 30 minutes.
  • Preheat oven to 180° C (350° F). Grease a 9-inch pie plate with oil or vegan butter. Remove the dough from the refrigerator and roll one disc of the dough into a circle which is slightly bigger than the pie pan. Place it in the bottom of the pie plate.
  • Now combine the apple slices, 2 tablespoons of whole wheat flour, demerara sugar, ground cinnamon and nutmeg in a bowl and mix until all the ingredients are evenly distributed.
  • Spoon the apple mixture over the dough in the pie plate and spread it evenly. Now roll out the second disc of dough into a circle which is slightly bigger than the pie pan. Place it on top of the apple filling. Crimp or flute the edges to seal them together.
  • Bake the eggless apple pie for about 30 minutes or until the top is golden brown. Allow to cool before slicing and serving.

Notes

  • You can use any type of apples you like for making this eggless apple pie.
  • If the dough is too crumbly or dry, add a few more teaspoons of water and mix until it comes together.
  • Be sure to not over-mix the filling or bake the pie for too long, otherwise it will become dry.
  • If you do not have demerara sugar, you can use any type of unrefined or regular cane sugar.
  • You can also sprinkle some oats or chopped nuts on the top of the pie for added texture and flavor.
  • For a crunchier crust, brush the top with melted vegan butter before baking.
  • You can also make mini eggless apple pies using the same recipe. Just use smaller pie pans and adjust baking time accordingly.
