Ingredients

  • 1 Lime
  • 2 Lemons
  • 1 Red Pepper
  • 3 Chili Peppers, Seeded And Roughly Chopped
  • 1 cup Fresh Parsley
  • Ground Black Pepper To Taste
  • 1 tbsp Smoked Paprika
  • Kosher Salt To Taste
  • 1/2 cup Extra Virgin Olive Oil
  • 2 1000 Grams Whole Chickens
  • 1/4 cup Red Wine Vinegar
  • 5 Cloves Garlic, Peeled

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. In a medium-sized bowl, combine lime juice, lemons, red peppers, chili peppers, parsley, black pepper, paprika, and salt. Mix together until evenly blended.
  • Slowly whisk in the olive oil until it is completely incorporated into the mixture. Rub the marinade all over the chickens, ensuring that it is evenly distributed and penetrating into the skin of the birds.
  • Place both chickens in a roasting pan and pour in the red wine vinegar and scatter with garlic cloves. Roast in your preheated oven for 1 hour and 25 minutes, or until the internal temperature of your birds reaches 165 degrees Fahrenheit.

• Make sure that all of your ingredients are at room temperature before mixing them together.
• Allow the chickens to marinate in the fridge overnight for added flavor.
• If you have time, baste the chickens with the remaining marinade every 20 minutes while they are in the oven.
