Ingredients

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups buttermilk
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 large egg, slightly beaten
  • 3 tablespoons canola oil

Instructions

  • In a large bowl, whisk together the sugar, baking powder, and flour. In a separate medium-sized bowl, mix together the buttermilk, salt, baking soda, and egg.
  • Slowly pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy. Heat a large skillet or griddle over medium heat and lightly grease with canola oil.
  • Spoon ¼ cup of the batter onto the hot pan, making sure to leave enough space between each pancake for flipping. Cook until bubbles start to appear on top of the pancakes and the edges are golden brown.
  • Flip and cook the other side until golden brown. Repeat with the remaining batter until all pancakes are cooked. Serve warm with butter and syrup, or your favorite toppings.

  • Make sure to mix the wet ingredients together before adding them to the dry ingredients, stirring only until just combined for light, fluffy pancakes.
  • Test the heat of your skillet or griddle before adding the batter – it should be hot but not too hot to prevent burning.
