Ingredients

  • 1 teaspoon Vanilla extract
  • 1 cup Sugar
  • Grease for the pan
  • Egg
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 dash salt
  • 1 16-ounce can Fruit cocktail
  • ½ cup Brown sugar
  • ½ Pecans Pecans
  • 1 teaspoon Cinnamon
  • 2 teaspoons Butter

Instructions

  • Preheat oven to 350 F (175 C). Grease a 9×13 inch cake pan and set aside. In a large bowl, combine all-purpose flour, baking soda, salt, and sugar together.
  • In another small bowl mix the egg with vanilla extract until combined and pour into the dry ingredients. Mix until everything is fully combined and then fold in the can of fruit cocktail until it’s evenly distributed.
  • Pour batter into the prepared cake pan and spread out evenly. In a small bowl, mix together brown sugar, pecans, cinnamon, and butter until everything is well combined.
  • Sprinkle the topping on top of the cake batter and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool completely before serving.

Notes

• Make sure to grease your pan well so that the cake doesn’t stick when ready to serve. 
• For a more flavorful cake, add some orange zest or juice to the batter.
• If you don’t have pecans on hand, you can also use walnuts or almonds as well.
• Serve this delicious Del Monte Fruit Cocktail Cake with a dollop of whipped cream or a scoop of vanilla ice cream.
