Ingredients

  • 2 5-pound bone-in prime rib roast
  • 1 tablespoon of kosher salt
  • 2 teaspoons black pepper
  • 6 teaspoons fresh thyme leaves minced
  • 7 garlic cloves minced
  • 2 tablespoons olive oil
  • 6 teaspoons fresh rosemary leaves minced.

Instructions

  • Heat your oven to 425°F (220°C).
  • Coat the prime rib in a mixture of kosher salt, black pepper, thyme leaves, garlic cloves, olive oil, and rosemary. Make sure all sides are evenly covered with this blend of seasonings.
  • Place the roast in the preheated oven for 15 minutes and then reduce the heat to 350°F (180°C). Roast the prime rib for an additional 1 hour and 30 minutes.
  • After roasting, take the prime rib out of the oven and let it rest for 10-15 minutes. Once cooled enough, slice and serve.

Notes

  • For a crispier crust, you can increase the oven temperature to 500°F (260°C) for the first 15 minutes of cooking.
  • You may need to adjust the roasting time depending on your oven and the size of your roast. Use a meat thermometer to check that it has reached an internal temperature of 145°F.
  • To ensure that the roast is perfectly cooked, use a thermometer to check that the internal temperature of the meat has reached 140°F (60°C) for medium-rare or 150°F (65°C) for medium.
  • If you want your prime rib served with gravy, you can make an easy pan sauce by adding 2 cups of beef stock to the roasting pan after removing the roast. Simmer on low heat until it reduces by half, then strain and serve.
